It was snowing and the kids are on winter break this week, hubby is out of town and I actually remembered to put it in the crockpot. My quick and easy version is bottom round (I also use london broil when it's on sale), beef broth and a shot of pepperocini juice (my family doesn't eat them so I don't add the whole ones). Cook on low all day. Just before serving, shred beef and put back into crockpot. We love this on Portugese rolls that are buttered and then toasted in the toaster oven.
