11 January/365 - sprinkled

Hibernating another day here in NJ. This morning when I took my daughter to the school bus it was 17 on the car thermometer. She insists on getting out of the car when the bus goes by at 7:26 am to meet up with the kids at the stop. The bus comes about 4 minutes later. My hands were numb by the time I got back in the car. Gloves? Nah, they don't fit right with fake nails.

I skipped the gym, came home and threw in some laundry, vacuumed, cleaned the kitchen, and then proceeded to mess it up making cookies. I used the below recipe, but skipped the preserves and confectioner's sugar and added sprinkles instead. They are a good shortbread cookie. Safe to make, because the wrestler son doesn't like them, and he is needing to make weight on Wednesday night.

Here's the recipe

Sweetheart Cookies

3/4 cup butter (no substitutes), softened
1/2 cup sugar
1 egg yolk
1 1/2 cups all-purpose flour
2 tablespoons raspberry or strawberry preserves
confectioners' sugar

Directions

In a mixing bowl, cream butter and sugar. Add egg yolk; mix well. Stir in the flour by hand. On a lightly floured surface, gently knead dough for 2-3 minutes or until thoroughly combined.

Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make an indention in the center of each. Fill each with 1/4 teaspoon preserves. Bake at 350 degrees F for 13-15 minutes or until edges are lightly browned. Remove to wire racks. Dust warm cookies with confectioners' sugar if desired. Cool.
